Good afternoon. I myself am a hotel man. He began his career at the Ararat Park Hayat Hotel in Moscow, then was the Lotte Hotel, Metropol, Seth Regens, Four Seasons. I also participated in the opening of a hotel in Arkhangelsk. Perhaps, it was in Arkhangelsk that I got that incredible experience when in practice, in a non-stop mode, you learn to be a real professional, excluding the slightest shortcomings not only of subordinates, but also your own mistakes. For example, already at the initial stage of kitchen design, it is extremely important to properly disperse the electrical load, ventilation systems, and water supply. Arsen, during your stay in Russia, you probably managed to appreciate the dishes that Russians prefer. Have a favorite?

You know, recently I was driving in a car and thought about it. I will say this: Russian cuisine will be among my top three favorites, along with Italian and Armenian. They are very similar in simplicity and cooking technology, in the range of products. One of my teachers, who was a real professional in his field, once said to me: "French cuisine is for a restaurant, and Russian is for home." I love this cuisine, especially its variety. I myself enjoy not only preparing these dishes, but also eating them. By the way, one of the very first dishes I learned to cook was fried potatoes. This is something!

How do you feel about experiments in the kitchen? Do you often update the menu in Russian Seasons?

I have a couple of original recipes: for example, halibut cooked at a low temperature, but I'm still a supporter of traditions. I cook food that I would eat myself. Many of my colleagues have an ambiguous view of Russian cuisine. Some say that it does not exist, others that it is very multifaceted and has absorbed the recipes of the whole world, others will say that it is ancient. I will say this: all the cuisines of the world borrow something from each other. Think for yourself: khachapuri-pizza - pies, manti-dimsam - khinkali - dumplings. For example, I believe that at home you need to eat those dishes that are familiar to you from childhood, to which you are accustomed. If we talk about the peculiarities of Russian cuisine, then I prefer soups. Borscht is the most delicious first course for me, despite the fact that it is rather difficult to prepare it.

In fact, it is not easy to find such tomatoes in particular, but we basically cook for our guests only from the best products. I personally go for cheese, some varieties of which are stored for only five days. The requirements for meat are also very high. And I also realized that you can't lure even the most pretentious restaurant with delicious food alone.
